Elaboration
Once the selection of the fruit has been made, the elaboration is based on the partial distillation of the clusters and gentle grinding of the berries.
The fermentation of the must is carried out in contact with the skins, with daily pumping over. The duration of the fermentation is 9 days and its average fermentation temperature is 25º C. Aged in American oak barrels for 6 months.
